Kevin Lundgren has developed a special line of 100% organic Shallots from a seed stock of only seven foundation plants that survived in the abondoned garden of a local German immigrant.

Shallots are a delicious combination of onions and garlic and are often mistaken for onions.  In fact, shallots are actually a unique species.  They grow in clusters, where separate bulbs are attached at the root base and by loose skins. The shallot is smaller than most onions and has a tapered shape and a fine-textured, coppery skin, which differentiates it from onions.

Kevin harvested several acres of 2008 crop shallots. He is offering a limited supply to growers for seed stock and to gormet chefs for cooking.
